Saturated fat is extremely heart healthy IF (AND ONLY IF) you dramatically limit your carbohydrates like sugar, white flour, etc. If you're eating a good amount of things like rice, sugar, white flour, high sugar fruits/vegetables, etc. the saturated fat becomes extremely unhealthy. Look at it this way... You CAN eat high fat (any kind except trans-fats) If you low carb but if you eat high carb and high fat you're looking for an early heart attack. The reason is because low carbers require the fat at higher levels to burn for energy. It does not get stored. If you are eating high carbohydrates you burn them for energy and your body stores the fats, clogging the arteries. Your body will always look for the carbohydrates first. I happen to be a low carber for life and do so at my physician's request because it's the only way I can effectively control my cholesterol without drugs. It's also the only way I can control my weight. I lost 70 lbs. eating a diet 60-70% fat, much of it saturated. I now have a cholesterol level so perfect that it puts me into a category only 5% of adults fall into. So, yes, saturated fat is extremely good for you if you are a low carber. This style of eating is now being recommended for type 2 diabetics as well. The nutrients in saturated fats are extremely valuable to the body. Others sorry for the language but, hell no. We are all dependent upon the soil and microorganisms that assist plants with the uptake of nutrients.
